Is there a tool, or link where I can see activity against my listing?

Yes. Go to Analytics - you can also reach it from the See Analytics link on any listing card under Menu > Manage Listings.

The dashboard shows Visitors, Pageviews, Listing views, Price checks, Book clicks, Inquiries and Bookings. You can see them over time and broken down by individual listing, and compare against the previous period.

A quick view count for a single listing also appears on its card under Menu > Manage Listings, beside an eye icon. If a listing has had no views yet, no view line appears on that card.

If you also want third-party tracking, you can still connect Google Analytics, but you do not need it to see your Houfy activity.
