Can a guest use a different credit card to pay a remaining balance?
Yes. Since Houfy doesn't handle payments there is no credit card on file. Travelers enter a credit card number when the second payment request is automatically sent.

Yes. When a guest pays a remaining balance they enter card details fresh on the payment page - there is no saved card to reuse, and nothing ties the balance to the card used for the first payment, so any valid card will work. This applies whether your listing is on Stripe, Square or PayPal.
The one exception is Automatic Payments. If the booking has automatic charges scheduled, the balance is charged to the payment method the guest saved at booking, without asking again. A guest who wants to use a different card should pay the balance from their payment reminder before the scheduled charge date.
Separately, whether there is a second payment at all is your choice as the host. On Edit listing then Payment Information, choose Full Payment for one payment of 100% at the time of booking, or Deposit + Balance to take an initial deposit now with the balance due before arrival.
